Here is a delicious, nutritious, and four-and-a-half-year-old-kid-friendly recipe for salmon patties. It is a froogalism.com exclusive; combining excellent taste, convenience, and value into a sumptuous (and freezer friendly) delight. Even better, it is my-daughter-approved as a kid friendly recipe that she can prepare most of as a four-and-a-half-year-old. It is also one of her favourite food to eat.
I buy my canned salmon on sale and I buy it in bulk. It is a wonder food; being both delicious and super-nutritious. Preparing a great meal in advance saves me time and money. Preparing one that I can freeze is even better, and suits my frugal sensibilities very nicely.
I love preparing food with my daughter a lot. It is a time that we can talk and create together (and experience the fruits of our labour). If you haven’t already tried it, cook with your son or daughter. It is a wonderful experience. Here is one of our absolute family favourites.
Scrumptious Salmon Patties
1 Med. Potato
1 Med. Sweet Potato
2 Small (213g) Cans of Sockeye Salmon
3 Green Onions (chopped)
1 Small Onion (finely chopped)
1 Tbsp. Dijon Mustard
2 Tbsp. Vegetable Oil
4 Wedges of Fresh Lemon
1. Cook and mash potatoes and sweet potatoes separately. Combine the two mashes.
2. Gently blend in the other ingredients (except oil and lemon wedges). Add Dijon, rosemary and pepper sauce to taste.
3. Shape into patties about ½ inch thich.
4. Heat oil in skillet. Fry patties over medium heat about 5 mins. per side (or until golden brown).
Serve patties while hot. Add some lemon to taste. Best served with rice and roasted vegetables.
Tip: The patties can be frozen and reheated as needed. Make a big batch and freeze it to save time and money.
