Going Bananas

Bananas are delicious and they’re good for you.  They’re loaded with lots of good stuff.  The problem is this – when you buy a slightly unripe bunch to give yourself a lead day or two before you start enjoying them, they all seem to ripen at the same time two days later.  As such, it seems to be feast (five bananas in one day once they ripen) or famine (no bananas while you’re waiting for them to ripen).  How can one enjoy a delicious banana on any day that they choose?

The answer is simple – separate them in your fruit bowl.  Bananas give off a gas that helps to ripen them.  When you have a whole bunch close together, there is a high concentration of this ripening gas.  Separate them and the concentration of the gas is less.  Bananas that give off more gas will ripen more quickly, those with less will ripen more slowly.

Put any overripe bananas that still come about despite your best efforts in the freezer for later inclusion in a terrific smoothie or banana bread.
